Carbohydrates Lab

Eat a meal and watch blood glucose and insulin respond, take a grain kernel apart and read ingredient lists, practise the carbohydrate calculations with worked solutions, sort the big ideas and work through real-life situations. Nothing here is graded.

MeasureValue

A simplified teaching model of a person without diabetes. The amount of glucose reaching the blood is scaled by the food's glycemic index, and its speed by how fast the food is digested (fiber, fat and intact structure slow it). Values are rounded from published GI tables; real responses vary from person to person and meal to meal. The insulin resistance setting weakens insulin's effect and raises insulin release, as in early type 2 diabetes. Not for personal medical decisions.
